Nutty for coconuts

Here we are at yet another Monday. This Monday is particularly special for me because it marks my last full school-day Monday of my year. YAHOOO!!! I am so anxious to get to this week over with and then it will be smooth sailing. Finals will be next Monday, Tuesday, and Wednesday…but I’ve got it all under control. :D I actually don’t mind finals week because they are super short school days and I’m out before noon.

Speaking of noon, that is the time today that I had my 3rd acupuncture appointment. It is going really well! I have gotten past the initial nervousness and uneasy feelings from the needles and now I just go in, my doc puts the needles in, and I get to take a nap! I have been researching all the benefits of acupuncture and it really is amazing! I love the whole natural holistic approach that it has. And I’ve got to admit..I feel better. I’m keeping my fingers crossed that this will be the cure for my constant sickness and allergy problems!!

Here’s a look at my artistic breakfast from this morning:

The overnight mixture was my regular mix of 1/2 cup oats, 3 tbsp of almond milk, 1 scoop protein powder, 1/2 mashed banana, lots of cinnamon. Then I topped it with an assortment of blueberries, banana slices, shredded coconut, and Mighty Maple. SOOOO GOOD!

Since I had that appointment at noon, I got to come home for lunch and whip up something real quick:

AND my first JamFrakas bar, thanks to Meg! This was so cute and delicious. I would definitely buy these again…or anything Larabar for that matter. ;)

After school I had planned on doing Jillian’s 30 Day Shred but I was darn tired…so I listened to my body and I took a nap!

When I woke up, I figured it was time for some snackage:

COCONUT ICECREAM!!!!

You have no idea how excited I was when I found this stuff. Being the ice cream fanatic that I am, I knew I had to try this stuff.

It is vegan and organic…and contains a good dose of healthy coconut fat.

Pure. Bliss. Enough said.

I’ve always said, there is no better way to end the day than with ice cream. :)

Now, since I didn’t get any exercise in this afternoon, I’m going to go for a walk with my doggie and my mom. Have a great night everybody!

    My favorite healthy dessert has got to be chocolate vitatops or even just some fruit :)

    i really need to try brussel sprouts. everyone seems to love them! they just look so weird haha, i wouldnt know what to do with them! yours look yummy though.

  8. That's great that you're noticing differences now that you've been getting acupuncture!

    I'm currently drooling over those blueberry muffins - YUM! My favorite healthy dessert is hands down grilled fruit, particularly pineapple :)

    that breakfast cookie looks SO good! is the texture soft or hardish?? im always curious whenever i see those cookies as to wether they are still all goey or if they really harden in the fridge.

    omg that ice cream looks SO good! ice cream is definetely my fav dessert :) vanilla flavs!

  12. Hooray for summer almost being hereee for you! Partayyy! Haha! I was always so curious about accupuncture...I don't know if I could get over the needles - eek! But if you insist that it makes you feel better, I wanna give it a try one day, definitely.

    So glad you enjoyed your Jamfrakas! I think they're SO CUTE haha! And tasty as well. I love coconut too - that ice cream looks amazing. I like the Soy Delicious ice creams :)

  16. Glad to hear that you're loving acupuncture, my dad's actually a doctor and he works acupuncture on his patients a lot!

    All the food looks delicious, of course....I still need to make some roasted brussel sprouts though! I remember how good they were, when when I had them a longgg time ago!

    And congrats on almost being done!! Your summer is so close!

  17. That bowl of oats is comparable to the Mona Lisa, PURE BEAUTY! I heard coconuts are good for the thyroid? Wooo! Have you tried the Chocolate Hazelnut flavor? Absolutely to die for. Forget Nutella (sacrilege?!)!
