Snow, Snow, Go Away…

Good Morning! I woke up, yet again, to a bunch of snow outside. *sigh* I was hoping a lot of it would be melted away by now! Come on Spring weather!!

Here is a video of my dog, Jaci, playing in the snow in our backyard (and that would be my mom talking in the background :)

And now back to this morning…

I decided that since it was Sunday morning, and I was in no hurry, I wanted to make a special breakfast. So I turned to one of my current favorites from a special blogger: Hangry Pants!! I made her delicious recipe for Barney Butter Pancakes. I have made this recipe several times already, and it has NEVER failed me!

Here it is in all it’s glorious-ness:


Topped with more Barney Butter and banana slices. And yes, it did taste as good as it looks. ;)

I also has some cottage cheese on the side for some more protein:


Plus a Pink Lemonade Emergen-C packet because my throat has been feeling sore:


Now, I think my mom and I are going to try and venture out of the house today and run some errends. Hope you all have a fabulous Sunday!

Trapped inside


I am sorry I have been gone for a little while but I have been trying to change up some things on the blog, working with different templates, etc. instead of posting. I know, bad blogger! I wanted more of a Spring-ish, Summer-ish feel to it…and I am still considering other ideas and getting some help from other bloggers so who knows what my blog will look like tomorrow! ;)

So now I have a good reason for wanting to make my blog more summer-ish and warm…Today I have had plenty of time to play around in Blogger World because I am currently SNOWED IN. Yep, that’s right…it is SPRING and we have gotten more snow yesterday and today than we have all winter long. Craziness!! So ever since yesterday, we have been watching movies (Helllllo Twilight), reading, blog reading, and drinking and eating all kinds of hot stuff to warm up. I think we are past the worst of it. It has stopped snowing so now I must wait until it all melts away…and then MAYBE I can get some nice weather coming this way! And so as you could imagine, I was in desperate need of making my blog remind me that Summer will soon be on it’s way.

Now, onto my eats for lunch:

A lovely combo of baked tofu, a hummus wrap on a whole wheat tortilla, carrots and sugar snap peas.


Now I am ready for my afternoon snack, so I am off! Bye!

Back to the Grind

Hi guys!

How has everybody’s Monday been? I must have pushed the snooze button at least 3 times this morning. UGH! But once I got to school and got going, my day went by pretty fast.

My sister and are taking the HPV series of shots and we had our 2nd shot today….my arm is SORE!!! It is a series of three shots and supposedly they each hurt a little more than the last. Great, huh? Well they were definitely right. Good thing I only have one left!

Ok, I will get on to the good stuff…here are my eats from today:



This oat mixture included: 1/2 cup oatbran, 1/2 cup silk, 1/2 cup water, lots of cinnamon, pinch of salt, blueberries, 1/2 banana, and 1 tbsp naturally peanut butter…Along with my cup of green tea. Seriously, could breakfast get any better than this?!?



1/2 100% whole wheat bagel with 1/4 cup egg beaters, 1 Morningstar veggie patty, and 1 slice of American cheese on top. With veggies on the side, of course.


Plus another chocolate chip ricotta cookie. I already started eating it before I remembered to take a picture of it!

Afternoon snack:


1 orange and 1 colby-jack cheese stick…again I already started eating the cheese stick before I remembered to grab my camera. I’m still trying to get used to taking food pics! :)



For Dinner, I decided to try something that I had in my freezer and have been wanting to try. Amy’s Pattar Maneer dinner!! I also had some leftover baked tofu so I added it to the meal to bulk it up a bit. This was so delish! I really haven’t dabbled into Indian food all that much but have always wanted to after seeing it on Fitnessista’s blog so many times! I hope I will be able to experiment more with Indian food in the future!

And now I’m going to go hang with the family while keeping a close eye on the weather. We are currently in a tornado watch right now and I am crossing my fingers that it won’t turn into a tornado warning.

Busy in the Kitchen

Hello lovely Bloggies!

I hope everyone has been having a wonderful Sunday. I have been quite productive today, myself. First off, I laid out my running gear last night and headed out for a run in the morning.


That’s everything, minus my ipod that I forgot to sneak in there. ;)

Then this afternoon, I decided I was in the mood to do some baking and cooking. But before getting started, I needed a pick-me-up, so I had a new Larabar flavor:


Coconut Cream Pie…I LOVE this flavor! I enjoyed eating this sooo much. This is definitely in the top 5 favorite Larabar flavors for me. :)

I also had some green tea to go along with my bar:


So for dinner I made an easy recipe that I love but haven’t made for a while. 7 layer Mexican style casserole!!



This delish casserole included beans, chicken, fresh chopped tomatoes, baby spinach leaves, mozzarella cheese, and LOTS of salsa. I cooked the chicken on the George Foreman grill and then layered all the ingredients and put in the oven for 20 minutes. It was fantastic!

Then I knew I needed to make something sweet next…so I decided to try a recipe that I had saved a while back, but never got around to making: Chocolate Chip Ricotta Cookies!!! Thanks Heather!


These were SO GOOD. And being the cookie dough kinda gal that I am, I had to eat some of it before popping it into the oven. YUM!!! I might just leave them unbaked next time. hmmmm….

And now I am getting ready to sit back and relax for the evening and watch Desperate Housewives and Brothers and Sisters! Then its back to school tomorrow. Oh weekend, why do you have to go by so fast?!?

First Post!

Hello Blog World! I am so excited to finally have my own blog and can’t wait to get to know more of all you awesome bloggers. I started reading blogs a few months ago, in an attempt to keep motivated with my healthy lifestyle, and have been hooked ever since. I knew it would be inevitable that I would eventually start one of my own…and I am so happy that I did!

Here is a little about me:

  • I am almost 17 years old
  • I live in a small town in Kansas…where you have to make your own fun
  • I want to live in a bigger city at some point in the future…big city= big opportunities! (and whole foods, :D)
  • I am still trying to figure what I want to do for my career. It has changed many times. Some of the options include: dermatologist, dietician, dental hygienist, sonogram person, or an event planner…obviously I have some deciding to do
  • I have a Golden Retriever, named Jaci, Who you will probably see many times on this blog :)
  • I love baking and cooking and coming up with new food combinations
  • My new-found passion is running. I have recently starting getting into it and have signed up for my very first race on April 11th. I could not be more excited for it!!
  • I have an obsession with Whole Foods. There, I admitted it. Thank the good Lord that I don’t currently live very close to one…otherwise I would be in major debt
  • I have a part-time job at a hair salon. I have been there for about a year and it has been an awesome first job. Can you say free hair cuts and color?!?!
  • I am going to the midnight release party for the Twilight movie tonight. Twilight is definitely another obsession
  • I am SO happy to now be part of the blog world and I hope I can fit in with all of these wonderful people! :D
