Busy in the Kitchen

Hello lovely Bloggies!

I hope everyone has been having a wonderful Sunday. I have been quite productive today, myself. First off, I laid out my running gear last night and headed out for a run in the morning.

That’s everything, minus my ipod that I forgot to sneak in there. ;)

Then this afternoon, I decided I was in the mood to do some baking and cooking. But before getting started, I needed a pick-me-up, so I had a new Larabar flavor:

Coconut Cream Pie…I LOVE this flavor! I enjoyed eating this sooo much. This is definitely in the top 5 favorite Larabar flavors for me. :)

I also had some green tea to go along with my bar:

So for dinner I made an easy recipe that I love but haven’t made for a while. 7 layer Mexican style casserole!!

This delish casserole included beans, chicken, fresh chopped tomatoes, baby spinach leaves, mozzarella cheese, and LOTS of salsa. I cooked the chicken on the George Foreman grill and then layered all the ingredients and put in the oven for 20 minutes. It was fantastic!

Then I knew I needed to make something sweet next…so I decided to try a recipe that I had saved a while back, but never got around to making: Chocolate Chip Ricotta Cookies!!! Thanks Heather!

These were SO GOOD. And being the cookie dough kinda gal that I am, I had to eat some of it before popping it into the oven. YUM!!! I might just leave them unbaked next time. hmmmm….

And now I am getting ready to sit back and relax for the evening and watch Desperate Housewives and Brothers and Sisters! Then its back to school tomorrow. Oh weekend, why do you have to go by so fast?!?
